
Long before I Cipressini became a destination for travellers from around the world, these hills were producing olive oil.
For generations, our family has cultivated olive trees overlooking the rolling landscapes of the Val d’Orcia, caring for them season after season with patience, dedication and respect for the land.
Every autumn, the olives are harvested by hand and taken to the mill the very same day. This immediate processing preserves their freshness, aromas and natural characteristics, resulting in an extra virgin olive oil of exceptional quality.

The result is a bright green oil with remarkable character: elegant, full-bodied and naturally peppery, with the unmistakable fragrance of freshly crushed olives and the authentic flavours of Tuscany.

Our oil is obtained exclusively through cold extraction.
Throughout the entire process, the temperature never exceeds 27°C, preserving the delicate aromatic compounds, polyphenols and natural characteristics that distinguish a truly exceptional extra virgin olive oil.
This method yields a smaller quantity of oil, but guarantees a significantly higher level of quality, flavour and nutritional value.
